Ingredients
2 tbsp. olive oil
2 lemons, zested and juiced
3 cloves of garlic
1/2 cup parsley
1/2 cup cilantro
1 tsp. salt
1/2 tsp. black pepper
1 pound shrimp
Add all of the ingredients except the oil and the shrimp to the food processor. Process until smooth. While it is running, slowly drizzle the olive oil through the feed tube. Place the shrimp into a large zip lock baggie. Pour the marinade over the shrimp, squeeze out the excess air and seal. Marinate in the refrigerator or in a cooler with ice for one hour. Grill or saute the shrimp (your choice) until it just turns pink on each side. Enjoy.
