Oat Bran Pancakes


1 cup Arrowhead Mills Organic Oat Bran Pancakes

1 egg (beaten) or egg substitute

1 tbsp. canola oil

1 tbsp. honey

2/3 cup almond milk (or low-fat regular milk or soy milk)

1/4 tsp. sea salt

1 banana (sliced)

1/2 cup frozen blueberries (for each serving)

1 tbsp maple syrup (for each serving)

Stir all ingredients (except for the banana) only until the lumps disappear.  Let the batter sit for a minute. Fold in the banana.  Use a 1/4 cup measure to pour the batter onto a preheated lightly oiled griddle pan.  Flip the pancakes when bubbles form on the surface and the edges begin to dry.

Put the blueberries and the maple syrup into a bowl and microwave on high for 90 seconds (if for one serving – longer for more).

This makes 4 servings.  Serving size is 2 pancakes, with 1/2 cup of blueberries and 1 tbsp. of maple syrup to pour over.

WW = 8 Pointsplus values.  Have it with two slices of Oscar Mayer Center Cut Bacon (add 1 point) or a hard-boiled egg (add 2 points).
