Turkey Meatloaf


12 oz. canned tomato paste

1/2 cup red wine

1/2 cup water

2 garlic cloves (minced)

1/2 tsp. ground basil

1/2 tsp. ground oregano

1 lb. ground turkey breast

1 cup rolled oats

1/2 cup zucchini (shredded)

1/2 egg (beaten) or a half cup of Egg Beaters

Combine the tomato paste, wine, water, garlic, basil, oregano and salt in a small saucepan.  Bring it to a boil, then reduce the heat to low and simmer uncovered for 15 minutes.  Allow the mixture to cool.

Preheat the oven to 350 degrees.  Combine the remaining ingredients and 1/2 cup of the tomato mixture in a large bowl.  Mix well.  Shape it into a loaf and place it into an ungreased 8 x 4 loaf pan.  Bake it for 45 minutes.  Pour 1/2 cup of the tomato mixture evenly over the top of the meatloaf.  Bake it for 15 more minutes.  Let it cool for 10 minutes, then cut it into six slices.

This makes six  servings.  WW = 5 Pointplus values per serving
